One of the interesting questions I’ve been in is how to create new meal traditions around special holidays and events. We are creatures of habit, and habit often says…. if it’s Father’s Day, it must be time for a steak on the BBQ! (More on plant-based grilling coming soon.)
Fortunately, for Dad’s Day this year, the needs of family members dictated that we gather around brunch time, and my husband wanted French Toast! This is such an easy and delicious dish, and my husband says he likes it better than the traditional dish! We are also experimenting with a gluten-free diet, so I purchased some Seeded Gluten-Free bread from New Cascadia Gluten Free Bakery, and used it. It was so delicious. My daughter brought vegan sausages she made, which were also gluten-free. Everyone (even the egg-eating folks at the table) loved the vegan versions of these dishes.
We topped off our special Father’s Day Brunch with a No-Bake Strawberry Pie! This is a great dessert now with all the local strawberries available! It is so easy to make, and everything about it is healthy (including the dark chocolate chunks on top!) Check out the Recipe page to learn how to make this fantastic dessert, and if you want more delicious and healthy desserts, one of my favorite cookbooks is, The Joy of Vegan Baking, by Colleen Patrick-Goudreau. Every recipe I’ve tried in this book is so good that people can’t believe it’s a vegan dish! Yaaaay! That’s the goal!
I’ll post her incredible Chocolate Chip recipe soon, so be watching for it!
Here we are enjoying our wonderful meal together. Thanks to my husband, Richard, who was actually the Father’s Day guest-of-honor, for taking the picture, and Happy Birthday, dear Hayley!
