Blossoming Vegan Chef

Our nephew, Nathan, is staying with us for a while, and he has been enjoying increased health eating a plant-based, gluten-free diet along with us.  A real benefit for me in this, is that he has an interest in learning to plan and prepare meals, so along with helping me cook fairly often, he is taking responsibility for choosing a meal and cooking it himself one night a week!

I better warn him that if he continues to prepare such delicious meals, we may not let him go!

Tonight, he prepared Broccoli-Almond Sweet and Sour Tofu, from the cookbook, Vegan Yum Yum, by Lauren Ulm.   The sub-title of this book reads, “Decadent (But Doable) Animal-Free Recipes for Entertaining & Every Day.”   This is a very appropriate title, as every recipe I’ve tried so far has lived up to the title of Yum Yum, and the meals are fairly easy to prepare, but taste as though you’ve been slaving over a stove for hours!
